Sausage and Rosemary Strata

Make-ahead brunch recipes are life savers.  Add this simple and delicious strata to your Easter entertaining plan!

  • 1 lb sausage, removed from casing
  • 1 lb rosemary bread*
  • 8oz cheddar cheese- shredded
  • 12 eggs
  • 2 cups milk
  • 1 tsp salt
  • 1 tsp pepper
  • *if you can’t find rosemary bread, add 1 T minced fresh rosemary to the egg mixture

Slice have the loaf of bread into inch thick slices, dice the rest.  Spread on a baking sheet and toast in a 300 degree oven  for 15 min- let cool.  In  large pan, cook sausage, breaking up into small pieces, over medium/high heat until browned- drain and reserve. 

Butter a 3 qt casserole dish.  Spread the bread slices in one even layer filling in the bottom of the dish.  Toss the bread cubes with sausage and ½ the cheese.  Spread evenly over bread slices.  Combine eggs milk, salt and pepper.  Pour over bread mixture, pressing down to absorb.  Cover and chill overnight.

Bake strata at 350 for 40 minutes, Top with rest of cheese and bake another 10 minutes until puffed, golden and set.
