Summer is a time for all types of gatherings, large and small. Try making this berry cobbler for your next event! This is a simple treat that can be diversified with any of your favorite fruits.
Mix Berry Cobbler
Serves 4-6 people
Ingredients
- 1.5 cup flour
- 1/4 tsp salt
- 2.5 tsp baking powder
- 6 T butter – cold in cubes
- 1.5 lb berries (red berries)
- 1/2 cup dark brown sugar
- 2 T cornstarch
- 1/2 cup creme fraiche
- 2 T heavy cream
- 1 T raw cane sugar
- 1 tsp of vanilla extract
Method
- Heat oven to 350 degrees Fahrenheit.
- Combine dry ingredients, cut butter into the mix. Refrigerate for 10 minutes.
- In a separate medium bowl, toss berries with brown sugar and cornstarch. Pour into your favorite baking dish.
- Take flour mixture out of the fridge and stir in next ingredients (creme fraiche, vanilla and cream.) Knead the dough 2 or 3 times (do not overwork the dough.) break into walnut size pieces and place on top of fruit.
- Place cobbler in the oven and bake for about 20 minutes or until fruit bubbles and topping is golden brown.
